Mango, Coconut and Lime Smoothie

I knocked this glass of heavenly loveliness the morning before heading off on a short trip and was desperate to use up some left over ingredients. Turns out, my leftovers are actually little miracles waiting to be born.

You can thank me later for this recipe, but in the meantime go and make this now or forever be wondering why might have been….! (OK, that’s deep, but you get my drift, this is de-lish!)

Ingredients (serves 2, but you could just drink it all yourself!):
1 and a half ripe banana’s
1 ripe mango
150ml of coconut milk (full fat)
2 tbsp of natural yoghurt
Juice of 1 lime (roll it first before cutting and juicing to get the most out of it)
A dribble of water to loosen it if necessary (don’t be heavy handed and dilute it too much), or 4 ice cubes.
Method:
Prepare your mango and slice the banana and pop into a blender or smoothie maker.
Add in the yoghurt and coconut milk and the the lime juice.
Blend until completely smooth. If your fruits are ripe this should take but a minute or two.
Test for flavour and consistency. At this point you might want to add a little water to loosen it, or a little more coconut milk if you want to balance out the banana flavour a bit more.
Instead of water you could add your ice cubes and this will also chill it down nicely as well as loosening too.
Serve immediately and….Enjoy!
