Caveman Drumsticks and Awesome Blue Cheese Sauce

It's pretty hard to get primal about your precious din-dins when you live a comfortable suburban existence.   But grabbing sticky, fiery drumsticks and ripping asunder; licking tacky fingers, wiping your mouth with the back of your hand and going back for more is about as close to being a caveman as you can get.

It’s pretty hard to get primal about your precious din-dins when you live a comfortable suburban existence.   But grabbing sticky, fiery drumsticks and ripping asunder; licking tacky fingers, wiping your mouth with the back of your hand and going back for more is about as close to being a caveman as you can get.

But then those cavemen didn’t have sweet chilli jam and Cashel blue cheese; napkins and hand wash…so on the whole I’ll plug for being a Suburban Caveman person just so I can eat these beauties in the comfortable surroundings of my home.

Roaring open fire is optional.  Heavenly enjoyment is compulsory.

Ingredients (serves 2, generously):

For the Drumsticks

  • 8 chicken drumsticks
  • 3 tbsp Olive Oil
  • 2 tbsp clear honey
  • 3 tbsp of sweet chilli jam
  • Zest and juice of 1 lime
  • Spring of fresh rosemary, finely chopped
  • Loads and loads of freshly cracked black pepper
  • 1/2 tbsp of smoked sea salt

For the Cashel Blue Cheese Sauce

  • 125ml of sour creme
  • 50g of Cashel blue cheese
  • Freshly cracked black pepper

Method:

  • Put all the marinade ingredients together in a large bowl and using a small whisk or fork mix together until well combined.
  • Add the chicken and make sure it’s all well coated, cover and leave to marinade for a couple of hours.
  • Heat up the oven to 150 degs celsius.  Line a baking tray with foil and take the chicken from the marinade and place on the tray.
  • Spoon over some of the marinade onto the chicken, cover with foil and roast in the oven slowly for 40 mins, turning once.
  • After 40 mins, take out of the oven and turn up the heat to 190 degs celsius.
  • Turn the chicken and spoon over some more of the marinade.
  • Place back in the oven and roast for another 15 mins until the drumsticks have gone lovely and sticky.
  • Meanwhile, make the blue cheese sauce by crumbling the cheese into the sour creme and whisking until completely combined.  Add in a load of freshly cracked black pepper and mix again.
  • Pour out into small serving bowls.
  • Serve up the sauce with the drumsticks, a dressed salad and some sweet potato wedges.
